La mission a combin\u00e9\u00a0<strong>analyse bibliographique, entretiens avec des experts<\/strong>\u00a0(philosophe, chercheurs, chefs) et \u00e9changes avec des consommateurs afin de mieux d\u00e9finir et structurer cette notion.<\/p>\n\n\n\n<p>Ce travail a abouti \u00e0 la\u00a0<strong>r\u00e9daction d\u2019un rapport strat\u00e9gique<\/strong>, int\u00e9grant des\u00a0<strong>outils op\u00e9rationnels pour mesurer la gourmandise<\/strong>\u00a0lors de tests consommateurs et panels experts. Le d\u00e9fi consistait \u00e0 atteindre un\u00a0<strong>Nutri-Score A<\/strong>, tout en garantissant un\u00a0<strong>profil sensoriel adapt\u00e9 aux enfants<\/strong>\u00a0et une\u00a0<strong>stabilit\u00e9 technologique compatible avec l\u2019industrialisation<\/strong>.<\/p>\n\n\n\n<p>Gr\u00e2ce \u00e0 notre expertise en\u00a0<strong>formulation, fermentation et \u00e9quilibre nutritionnel<\/strong>, Scinnov a optimis\u00e9 la recette pour concilier performance nutritionnelle et acceptabilit\u00e9 sensorielle. L\u2019accompagnement a \u00e9galement int\u00e9gr\u00e9 la\u00a0<strong>recherche d\u2019un copacker<\/strong>, afin d\u2019assurer le\u00a0<strong>transfert du laboratoire vers la production industrielle<\/strong>. Cette technologie permet d\u2019obtenir des\u00a0<strong>prot\u00e9ines identiques \u00e0 celles du lait de vache<\/strong>, avec une\u00a0<strong>empreinte environnementale significativement r\u00e9duite<\/strong>.<\/p>\n\n\n\n<p>L\u2019objectif \u00e9tait de concevoir des prototypes permettant de\u00a0<strong>pr\u00e9senter et comparer la solution<\/strong>\u00a0aux produits existants sur le march\u00e9. L\u2019expertise couvre la\u00a0<strong>formulation, l\u2019optimisation nutritionnelle et la stabilit\u00e9 technologique<\/strong>, en int\u00e9grant les contraintes r\u00e9glementaires et industrielles.<\/p>\n\n\n\n<p>Les projets int\u00e8grent diff\u00e9rents\u00a0<strong>process et conditionnements<\/strong>\u00a0: carbonatation, canette, bouteille, BIB ou verre, avec des traitements tels que\u00a0<strong>pasteurisation, st\u00e9rilisation ou HPP<\/strong>.
